Method
Wash the tomatoes and roughly chop them. Peel the garlic and remove the stems from the dry chillies. Keep the tamarind and other ingredients ready.
Heat a dry kadai on low flame. Add the urad dal, dry chillies, garlic and curry leaves, and roast for 3 to 4 minutes until the dal turns light golden and the chillies become crisp. Transfer them to a plate.
Pour 2 teaspoons of oil into the same kadai and heat on medium flame. Add the tomatoes, tamarind and salt, and cook for 8 to 10 minutes until the tomatoes turn soft and pulpy and most of their water dries up.
Cool the roasted ingredients and cooked tomatoes for 5 minutes. Grind everything in a mixie to a thick, slightly coarse thogayal, adding a little of the water only if the mixie needs it.
Heat 1 teaspoon of oil in a small kadai on medium flame. Add the mustard seeds and let them crackle for 1/2 minute. Add the curry leaves and asafoetida and fry for 1/2 minute until the leaves turn crisp.
Pour the tempering over the thogayal and mix well. Check the salt and serve with hot rice.
