Method
Wash the tomatoes, green chilli, curry leaves and coriander leaves. Dry the curry leaves and peel the onion. Finely chop the onion, tomatoes and coriander leaves, slit the green chilli, and whisk the curd until smooth.
Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds and cumin, and fry for 30 seconds until they splutter and sizzle. Add the green chilli and curry leaves, and fry for 30 seconds until the leaves stop crackling.
Add the onion and tomato. Cook on medium flame for 8 to 10 minutes, stirring often, until the onion is soft, the tomato is mushy and the raw smell goes.
Turn off the flame and transfer the cooked mixture to a plate. Cool it for 10 minutes until it reaches room temperature. Mix it with the curd, salt and coriander leaves.
Taste and adjust the salt. Serve the pachadi at room temperature, or chill it for 10 minutes before serving.
