    In a mixing bowl combine all the wet ingredients together along with the sugar and whisk until thoroughly mixed.

    Add in the maida, baking powder, soda and gently mix.

    Grease and flour a baking tray and add in the batter. In a deep pan, pour in salt and let it pre heat on a low medium flame for 10 minutes. Add in the tray into the pre heated pan, cover and let it cook on a low medium flame for 35-40 minutes or until a toothpick comes out clean. Let the cake rest for 10 minutes.

    In the meantime, add in the sugar, water and honey for the soak, once the sugar dissolves, romove it from the heat and spon it on top of the cake.

    While the cake soaks, add in the jam and loosen it up with some water.

    Top the cake with the jam and sprinkle some desiccated coconut on top and serve.
