Method
Rinse the puffed rice in the water and drain it well. Press it gently so it softens without becoming watery. Rinse the curry leaves and coriander leaves, peel and finely chop the onion, slit the green chillies, remove the dry chilli stems and chop the coriander leaves.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds, urad dal and cumin, and fry for 1 minute until the mustard splutters and the dal is light golden. Add the dry red chillies, curry leaves and roasted peanuts, and fry for 1 minute until the curry leaves are crisp and the peanuts are hot.
Add the onion and green chillies. Fry on medium flame for 5 minutes until the onion is soft and lightly golden.
Add the turmeric powder, salt and water. Cook on medium flame for 1 minute until the water starts simmering. Add the drained puffed rice and cook on low flame for 3 minutes until it is hot and evenly coated.
Switch off the flame and mix in the lemon juice and coriander leaves. Rest for 2 minutes, then serve hot.
