Method
Soak the tamarind in 100 ml warm water for 15 minutes. Squeeze it well and strain the tamarind water. Keep it aside.
Peel and rinse the shallots, and keep them whole. Rinse and slit the green chillies. Rinse the curry leaves and coriander leaves, then chop the coriander leaves. Pat the curry leaves dry so they do not splutter in hot oil.
Heat oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds, cumin, dry red chilli and curry leaves. Fry for 1 minute until the mustard seeds crackle.
Add the shallots and green chillies. Fry on medium flame for 6 to 8 minutes, stirring often, until the shallots turn light golden and soften.
Add turmeric powder, red chilli powder, coriander powder and salt. Mix on low flame for 1 minute until the raw smell of the powders goes. Add the tamarind water and 350 ml water.
Boil on medium flame for 10 to 12 minutes until the shallots are fully cooked and the gravy thickens slightly. Add jaggery and simmer for 2 minutes until it melts completely.
Switch off the flame. Mix in the coriander leaves and serve with hot rice or chapati.
