Method
For the muthiya, mix the methi leaves, wheat flour, besan, 1 tsp ginger green chilli paste, 1 tsp sugar, a pinch of turmeric, a pinch of salt and 1 tbsp oil. Add a few drops of water and shape into 12 small dumplings.
Heat the oil for frying in a kadai. Fry the muthiya on medium heat for 5 minutes till golden brown. Drain and keep aside.
For the green masala, mix the grated coconut, coriander leaves, the rest of the ginger green chilli paste, crushed garlic, crushed peanuts, sesame seeds, the rest of the sugar, lemon juice, red chilli powder, coriander powder, the rest of the turmeric and the rest of the salt.
Peel the yam, sweet potato and raw banana and cut into big cubes. String the avarakkai. Slit the brinjals and potatoes in a cross from the bottom, keeping the top joined, and stuff them with a little of the green masala.
Heat 3 tbsp oil in a heavy pot. Add ajwain and asafoetida. Add the avarakkai and green peas with half of the remaining masala and cook for 3 minutes, stirring.
Put the yam, potatoes, sweet potato, raw banana and brinjals on top. Spread the rest of the masala over them and sprinkle 150 ml water. Cover and cook on low heat for 30 minutes till all the vegetables are soft. Shake the pot now and then; do not stir.
Add the fried muthiya. Cover and cook for 10 minutes more.
Rest for 5 minutes and serve hot with puri or roti.
