Method
Wash the varagu 2 to 3 times. Put it in a pressure cooker with 540 ml water, the crushed ginger, slit green chillies and a pinch of asafoetida. Pressure cook for 5 whistles, about 15 minutes.
When the pressure drops, open the cooker. Take out the ginger. Mash the millet well with the salt and let it cool fully.
Heat the oil in a small pan. Add mustard seeds and let them splutter. Add urad dal and fry for 1 minute till golden. Add the dry red chilli, a pinch of asafoetida and curry leaves. Pour this over the millet.
Add the cold milk and mix till smooth. Add the curd and mix well. Add a little more milk if it is too thick.
Top with coriander leaves and grated carrot. Serve cold with pickle.
