Method

  1. 1

Get ready by rinsing the banana stem, removing the outer layers, slicing it into thin rounds, removing the hard fibres and chopping it finely. Slit the chillies, chop the shallots, rinse the curry leaves, grate the coconut and crush the cumin. Keep the chopped stem in 1 litre water while you finish the prep, then drain it and place it in a kadai with turmeric, 1 tsp salt and 100 ml water. Bring it to a boil on high flame for 2 minutes until bubbling, then cover and cook on low flame for 8 minutes until tender but still firm.

Heat oil in another kadai on medium flame for 1 minute until hot. Add mustard seeds and fry for 30 seconds until they splutter. Add urad dal, curry leaves and green chilli, and fry for 1 minute until the dal turns light golden.

  4. 4

Add the cooked banana stem and any water left in it. Fry on medium flame for 2 minutes until it is evenly mixed and the extra water dries.

  5. 5

Mix in the grated coconut, crushed cumin and remaining salt. Cook uncovered on low flame for 2 to 3 minutes until the moisture dries and the thoran looks dry.
