Wash and peel the mudavattukal kilangu. Chop some into tiny cubes, retain some as larger pieces.

In a pan, heat oil and add the fennel seeds, cumin seeds, peppercorns, chillies, cashew nuts and curry leaves. Sauté for 2 mins. Add this to a mixer grindger with the shallots, tomato, the small vegetable chunks, coconut and coriander leaves. Make a thick paste without adding extra water.

In a pressure cooker, heat oil. Add fennel seeds, curry leaves and shallots. Sauté well and add the paste. Cook for 5 mins on a medium flame. Add salt and coriander powder.

Add water and bring to a boil, then add the garam masala powder. Add the chunks of the vegetable. Pressure cook for 4 whistles. Allow the pressure to release naturally. Finish with fresh coriander leaves and serve hot with idlis.
