Vethalai kulfi, or paan kulfi: full cream milk reduced slowly, blended with betel leaves and edible camphor and frozen. Makes 6, 50 min plus freezing, video.

Method

Heat a heavy-bottomed Kadai and bring the milk to a boil and continue to simmer on medium heat. Keep stirring at intervals to prevent milk from sticking to the bottom of the pan. Simmer until the volume of the milk is reduced by half. Should take around 30 minutes. Add sugar, and continue to simmer for 5 more minutes. Remove from heat and allow it to cool.

Add betel leaf, camphor, and the cooled down reduced milk in a Mixer jar and blend into a coarse paste.

Strain the betel leaf mixture into the milk, gulkand and mix it well. Once it reaches room temperature, transfer to kulfi molds and freeze for at least 10 hours. After 3 hours, if necessary, insert a wooden stick to use as a handle.

Unmould the kulfi, sprinkle the chopped nuts, rose petals and serve.
