Melt the chocolate with the butter on a double boiler.

Beat the sugar into the eggs and whip until fluffy and pale. Fold the chocolate mixture with the egg mixture. Once fully incorporated, add vanilla extract and the rest of dry ingredients i.e flour, baking powder, salt. Fold gently.

Butter your ramekins and optionally coat with granulated sugar to add a crunch to the finished product. Pour your batter into the ramekins, only ¾ the way to the top. Bake at 190C for 7-8 minutes. After removing, let it cool for 5 minutes before running a butter knife around the edge to release. Demould onto a plate and top with icing sugar.
