Christmas yule log, or buche de Noel: cocoa coffee sponge rolled with chocolate cream and covered in ganache. Serves 10, 75 minutes plus chilling, with video.

    Combine the maida, cocoa powder and baking powder together. Set aside.

    In another bowl, beat the eggs along with sugar until it turns light and fluffy.

    Add oil, instant coffee powder and salt. Mix until just combined.

    Fold in half of the flour mixture. Add in the remaining after it is completely incorporated.

    Line a large baking tray with baking paper. Pour the batter and spread evenly using a spatula. Bake in a preheated oven at 180c for 13-15 minutes.

    On another baking sheet, sprinkle icing sugar. Overturn the cake onto this baking sheet and remove the top sheet. Roll it while it is still warm. Allow it to cool completely at room temperature.

    For the frosting, add the cream and chocolate into a heatproof bowl. Place the bowl over a pot of boiling water and mix until it melts completely.

    Whip cream in a bowl until it forms stiff peaks. Add half the chocolate ganache and mix well.

    Apply this cream evenly over the sponge and roll it into a log.

    Cut it diagonally at one end and stick it to the side to make it look like a branch of the log.

    Spread the other half of the chocolate ganache over the log. Cool in the refrigerator for at least 1 hour.

    Make crooked lines with the back of a knife or a skewer. Sprinkle cocoa powder and icing sugar on top just before serving.

    As a decoration, you can use crushed biscuits to resemble the texture of soil. You can also use herbs and cherries for decoration. Slice and serve.
