Cookd masalas for potato
Method
Peel the potatoes and cut them into small half-inch cubes. Wash them and drain. Remove the seeds from the capsicum and cut it into 1-inch pieces. Chop the green chillies and coriander leaves.
Heat the oil in a kadai on medium flame. Add the asafoetida and cumin, and fry for 30 seconds. Add the green chillies, turmeric powder, coriander powder and red chilli powder, and stir for 20 seconds.
Add the potatoes and salt, and mix well. Sprinkle the water, cover and cook on low flame for 10 to 12 minutes, stirring twice, until the potatoes are almost soft.
Add the capsicum and mix. Cook without the lid on medium flame for 5 to 6 minutes until the capsicum is just soft and the potatoes are fully cooked.
Add the amchur powder, garam masala and coriander leaves. Mix and cook for 1 minute until the masala coats every piece. Serve hot with phulka, or with dal and rice.
