    Dry roast the ingredients required to make the angara masala till it is aromatic and blend it to a fine powder.

    Heat a pan, add onion and saute till it turns golden brown. Add ginger garlic paste and cook it for a few seconds. Add the tomatoes and cook till it turns soft. Add the kashmiri chilli powder and cook on a medium flame for a minute.

    Transfer the mixture to a blender, add little water and blend it to a fine paste.

    Transfer the mixture to a pan and start cooking it on a medium flame, mixing it regularly. Add water and the ground masala and mix well and bring the gravy to a soft boil. Add the kasuri methi, fried onions and paneer and mix gently till the ingredients combine evenly.

    Add salt, ghee and cream, bring the mixture to a simmer. Let the mixture simmer for 10 minutes.

    Place a piece of hot coal in a bowl and place it on the gravy. Add a tbsp of ghee, cover it immediately. Let it smoke for 5 minutes. Transfer it to a bowl. Serve it hot.
