Heat oil in a kadai, Add mustard, urad dal, dry red chilli, curry leaves and let it crackle.

Add the onions and saute till it turns translucent. Add a pinch of asafoetida, mix it well. Cook the onions till they start to turn light brown.

Add ginger garlic paste, mix it for a few seconds.

Add the masala, mix it well and let it cook for a minute.

Add salt, sugar and water. Mix it well. Cover and cook it till all the water evaporates.
