Cookd masalas for moong dal

Method

  1. 1

Get ready by peeling and grating the ginger. Slit the green chillies and keep the spices measured.

  2. 2

Dry-roast the split yellow moong dal in a kadai on low-medium flame for 5 to 6 minutes. Stir continuously until it is evenly light golden and smells roasted; do not let it turn dark brown. Remove from the heat and rinse it once under water.

  3. 3

Transfer the rinsed dal to a pressure cooker and add the water. Pressure cook on medium flame for 2 whistles, about 10 minutes, until the grains are soft but still hold their shape. Let the pressure release fully for about 8 minutes before opening the cooker.

  4. 4

Heat ghee in a small tempering pan on low flame for 30 seconds. Add cumin, bay leaves and dry red chillies, and fry for 30 seconds until the cumin crackles. Add ginger and green chillies, then fry for 1 minute until the raw ginger smell reduces.
