Boiled egg thokku: scored boiled eggs in a thick Tamil Nadu tomato and onion masala with mustard and curry leaves. Mild, serves 2, 40 minutes, with video.

Heat Oil in a kadai, add mustard, cumin, green chilli and curry leaves. Let it crackle.

Add the sliced onions and saute till it turns golden brown.

Add ginger garlic paste and saute for a minute.

Add the spice powders and saute till it loses its raw flavour.

Add the tomatoes and let it cook till it is mashed and oil is released from the sides.

Season it with salt and sugar. Mix it well.

Add chopped coriander leaves. Mix it well. Keep it aside.

Heat oil in a kadai, add the prepared tomato thokku, and cook it for a minute

Add ¼ cup of water, mix it well. Bring it to a boil

Score the boiled eggs, add them to the thokku and toss it till it is coated with the thokku

Transfer it to a bowl, garnish it with chopped coriander. Serve it hot with rice, dosa/idlis etc
