Soak the tamarind in hot water for at least 15 minutes.

In a pan, heat the oil. Add the sliced onions and fry them until they turn golden brown. Remove them from the heat.

Add the sliced garlic. Remove them and set aside as soon as they turn golden brown.

Fry the dried red chillies for a few seconds until they barely start to darken. Set the chillies aside and reserve the remaining oil for later use.

Blend the fried chillies into flakes. Combine the fried onion, garlic and chilli flakes.

Mix the salt with water until the salt has dissolved. Keep all the other ingredients prepared.

Slit the boiled eggs halfway through. Stuff the fried onion mixture into the egg.

Pour in a teaspoon of the tamarind extract and the salt mixture, a teaspoon of the remaining oil and a few drops of lemon juice. Garnish with a few sprigs of coriander leaves.
