Cookd masalas for chicken
Method
Mix the chicken with curd, 1/2 tsp turmeric powder, cumin powder, coriander powder, red chilli powder, sugar, 1 tsp salt and 1 tbsp mustard oil. Keep aside to marinate for at least 30 minutes.
Boil the eggs for 10 minutes. Cool them in cold water, peel and prick them all over with a fork.
Peel the potatoes and cut each in half. Rub the eggs and potatoes with a pinch of turmeric and salt. Heat the remaining mustard oil in a heavy pan until it smokes, then lower the heat. Fry the eggs for 2 to 3 minutes until golden and take out. Fry the potatoes for 5 minutes until light brown and take out.
In the same oil, add the bay leaves, cinnamon, cardamom and dry red chillies. Fry for 30 seconds. Add the onions and fry on medium heat for 8 minutes until golden brown.
Add the ginger paste and garlic paste. Fry for 2 minutes until the raw smell goes.
Add the chicken with all its marinade and the slit green chillies. Cook on high heat for 5 minutes, stirring, then on low heat for 5 minutes.
Add the fried potatoes and 400 ml boiling water. Cover and cook on low heat for 20 minutes until the chicken and potatoes are soft.
Add the fried eggs and cook uncovered for 5 minutes. The gravy should stay thin. Serve hot with rice or paratha.
