    In a cast-iron pan, add the onions and saute for 10 seconds

    Add in the curry leaves, ginger garlic paste and tomatoes along with all the spice powders and saute for 2-3 minutes or until the tomato turns mushy and the onions turn soft.

    Once the raw flavour of the masalas disappears, add in 2 eggs and sauté until cooked and still soft.

    Turn the heat to simmer and break in the remaining 4 eggs and mix thoroughly, making sure it’s still runny. Remove from the pan immediately, garnish with coriander leaves and serve hot with dosa or parottas.
