Easy paneer puff roll: buttery layered maida dough rolled around a spiced paneer, onion and capsicum filling. Medium-spicy, makes 6, 70 minutes, with video.

For the easy puff dough - In a mixing bowl, add maida, salt, sugar and water. Mix well. Add water, melted butter 2 tbsp and mix to bring together a rough dough. Cover and rest for 10 mins.

Knead the dough until smooth and rest again for 10 minutes. Apply 1 tbsp of butter.

Portion into 6-8 pcs. Dip in melted butter and rest.

For the filling - Heat oil in a pan. Add the onions and cook until translucent. Add the ginger garlic paste and green chillies, and cook until the flavour is no longer raw. Add the capsicum and cook until tender. Add the powdered spices and salt and mix well to combine. Add the paneer and mix well. Finish with chopped coriander leaves. Keep aside to cool.

Roll out each roundel as thin and large as possible. Stretch gently. Drizzle some butter. Place some filling closer to one side. Drizzle 1 tbsp of melted butter, apply and fold in itself. Drizzle more butter after each fold. Roll like how a spring roll is made (sides in and then rolled gently). Place this on a baking sheet. Repeat with all rolls and the remaining filling. Bake in a preheated oven at 180C for 25-30 mins until golden brown. Cool slightly and serve!
