Cookd masalas for eggs
Method
Add the ingredients listed under gravy and blend into a fine paste. With only 1 tsp each of kasuri methi and Kashmiri red chilli powder.
To make egg cubes, whisk the eggs with a pinch of salt and strain the eggs. Pour it into a greased and lined mold and steam for 10 mins, until firm.
Cut this into even cubes.
In a pan, heat butter and add 1 tsp of red chilli powder. Strain and add the gravy, Wash the blender with 1 cup of water and strain with the gravy so that you don’t waste any. On a medium flame, cook for 10-15 mins covered, stirring occasionally. It will thicken.
Add the milk and balance 1 tsp of kasuri methi. Simmer for a further 5 mins. Add the egg cubes and cook for 2 mins. Serve hot with a knob of butter.
