    Roast all the whole spices in a little bit of groundnut oil until fragrant . To a little oil, add the channa dal and rice. Toast until lightly golden for 1-2 minutes on a low heat. Remove the chana dal and rice mixture and reserve the oil in the pan.

    In the remaining oil add the dry red chillis and the curry leaves. Saute it for 1 minute on a medium heat until fragrant. Remove from the pan. Blend all the broiled ingredients into a powder and aside.

    In a preheated kadai, add groundnut oil. Once hot, add your shallots and saute on a medium heat for around 5-6 minutes or until it starts to soften. Once the shallots have sufficiently softened, turn the flame off and add the grated coconut along with the spice powder. Keep stirring for 1 minutes and remove from the kadai. Blend this mixture into a fine paste. Add water as needed.

    In a fresh preheated kadai, add groundnut oil. Once hot, add the shallots and cook on a medium heat for around 5 minutes or until they start to soften. Then add the curry leaves, dry red chillies and ginger garlic paste. Once the raw flavour of the ginger garlic paste has abated, add in the chicken and saute for 2 minutes. Let all the water from the chicken evaporate .

    Add salt, turmeric the remaining spice powder and the shallot paste and mix to combine

    Add water and bring to a simmer. Cook the chicken for 10 minutes.
