    Wash and peel the large potatoes. Cut them into french fry baton shapes and soak them in cold water for 10 mins.

    Place them in water with baking soda and salt. Bring it to a boil, for a minute or two.

    Fry them in medium hot oil for 2 mins and strain them, allow them to cool completely.

    Fry them again, in hot oil until golden brown and crispy.
