  1. 1

Soak the tamarind in 100 ml water for 10 minutes. Meanwhile, peel the garlic, roughly chop the tomatoes and finely chop the coriander leaves. Squeeze the tamarind well and strain the tamarind water into a bowl.

Dry-roast the cumin, black peppercorns and garlic in a kadai on low flame for 3 to 4 minutes, until the spices smell roasted and the garlic softens slightly. Let them cool slightly, then grind them with 60 ml water to a coarse paste.

Add the ground cumin paste. Heat on low flame for 2 to 3 minutes, only until the rasam is hot and frothy around the edges. Do not let it boil hard. Switch off the flame.

  5. 5

Heat the oil in a small kadai on medium flame for 1 minute until hot. Add the mustard seeds and let them splutter. Add the cumin, asafoetida and curry leaves and fry for 20 to 30 seconds until the curry leaves crackle.
