Dry roast all the ingredients for the masala powder and set aside to cool down

Soak the tamarind in hot water for 15-20 minutes.

Add the curry leaves and roasted ingredients to a mixer bowl and blend it into a smooth paste (add a splash of water if required) and set aside.

In a kadhai pour sesame oil and add all the ingredients for the tempering and add garlic. Saute until aromatic and add finely chopped tomato, cook for 30 more seconds and add asafoetida and turmeric powder.

Add the ground paste. Cook on moderate heat for 3-4 minutes or until the raw flavour totally disappears, then add the tamarind water and boil for a few minutes. Once thickened remove from the heat and serve over rice. Imperative to pour ghee over the rice and eat it with sutta appalam.
