    In a kadhai, pour oil and add the dals, sesame seeds, black pepper, chillies and garlic. Saute until the dals turn deep golden brown and aromatic.

    Add in all the other ingredients and saute until the coriander leaves are completely wilted and the mixture turns dry.

    Let the mixture cool completely. This will make sure the mixture once blended does not turn into a paste. Once thoroughly cooled, add it into a mixer jar and blend it into a coarse powder. Transfer the podi into an airtight container and store upto 3 weeks in the refrigerator.
