In a bowl, combine all the ingredients. Add the hot oil and mix well. Add water and bring together a soft but non-sticky dough. Cover and rest for 15 mins.

Divide equally into roundels, flatten each piece on a parchment paper/ banana leaf. It must be 1 cm thick. Fry in medium-hot oil until golden brown and crispy. Each batch will take 4 to 5 minutes. Flip gently now and then for an even colour.
