Method

    Wash and Soak the Urad Dal for 4 hours

    In a mixer grinder, grind the green chilli and ginger.

    Add soaked Urad Dal to the same mixer grinder jar.Grind the urad dal with very little cold water until the batter is fluffy and soft but not too watery.

    Add finely chopped Shallots, crushed black peppercorns, Chopped curry leaves, asafoetida and salt to the batter.

    Heat oil in a deep frying pan. Wet your hands with water, make small balls of the batter. Use the thumb finger and make a hole in the middle. Drop the vadai into the oil carefully.

    Deep fry until the vadai is crispy and golden brown. Repeat the process until the batter is over.
