Method
Get ready by washing the beans, carrot, cabbage, curry leaves and green chilli. Peel the carrot and onion, trim the beans, and grate the coconut. Chop the beans and carrot into small pieces, shred the cabbage, slit the green chilli, break the dry red chilli and chop the onion. Pat the curry leaves dry so they do not splutter in hot oil.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds, urad dal, dry red chilli, curry leaves and green chilli. Fry for 1 to 2 minutes until the mustard seeds crackle and the dal turns light golden.
Add the onion and cook on medium flame for 3 to 4 minutes. Stir until it turns soft and lightly golden.
Add the beans, carrot, cabbage, green peas, turmeric powder, salt and water. Mix well, cover and cook on medium flame for 8 to 10 minutes, stirring twice, until the vegetables are cooked but still hold their shape.
Remove the lid and cook on medium flame for 2 to 3 minutes. Stir until the extra water dries up and the poriyal looks dry.
Add the grated coconut and mix on low flame for 1 minute. Switch off when the coconut is warm and evenly mixed.
