Modak, or kozhukattai: a soft rice flour dough filled with coconut, jaggery and cardamom, shaped and steamed. Makes 5 servings in 40 minutes, with video.

Bring the water to a boil with salt and ghee. Add the rice flour and mix immediately to form a rough dough.

Switch off the flame, cover and rest for 10 minutes.

Grease the bowl with ghee. Knead into a smooth dough, cover with a moist cloth and set aside.

For the sweet filling: Toast 1 cup of coconut for 2 minutes and add the jaggery. Mix well and add the cardamom powder. And set aside.

Divide the dough.

Roll the dough into discs, cut using a cutter for uniform shape.

Place the stuffing in the center and close the ends of the dough to make a half-moon shape, make indents at the end with your finger.

Steam the modaks for 10 minutes.
