Cookd masalas for curd
Method
Peel and finely chop the shallots, ginger and garlic. Slit the green chillies, break the dry red chillies and separate the curry leaves from the sprigs.
Whisk the curd, water and salt in a bowl until smooth and loose. Keep the buttermilk ready without any lumps.
Heat coconut oil in a kadai on medium flame for 1 minute until hot. Add mustard seeds and let them splutter. Add fenugreek seeds, dry red chillies and curry leaves and fry for 20 to 30 seconds until the curry leaves turn crisp.
Add the shallots, ginger, garlic and green chillies. Fry on medium flame for 3 to 4 minutes until the shallots soften and turn light golden.
Lower the flame and add turmeric powder. Stir on low flame for 1 minute until the raw smell goes. Pour in the whisked buttermilk.
Warm the moru on low flame for 2 to 3 minutes, stirring often. Turn off the flame when it is hot but not boiling; do not let it bubble or the curd may split.
