Cookd masalas for puttu flour
Method
Mix the puttu flour with half the salt. Sprinkle the water a little at a time and rub with your fingers until it looks like wet sand and holds shape when pressed. Mix in half the grated coconut. Cover and rest for 10 minutes.
Beat the eggs with the black pepper powder and a pinch of salt. Heat 1 tbsp coconut oil in a pan, pour in the eggs and scramble for 2 minutes until just set. Take them out.
Heat the rest of the coconut oil in the same pan. Add the curry leaves and onion and fry for 5 minutes until golden. Add the ginger and garlic and fry for 1 minute.
Add the turmeric powder, red chilli powder and coriander powder and fry for 30 seconds. Add the tomato and the rest of the salt and cook for 4 minutes until soft. Mix in the scrambled egg and coriander leaves and cook 1 minute. The masala should be moist but not wet.
Boil the water in the puttu pot for 5 minutes until it steams well. Meanwhile fill the puttu tube in layers: 1 tbsp coconut, 2 tbsp egg masala, then 4 tbsp puttu flour mix. Repeat and end with coconut. Do not press it down.
Close the tube, set it on the pot and steam for 6 to 7 minutes until steam comes out of the top. Push the puttu out onto a plate. Make the rest the same way and serve hot with banana or kadala curry.
