Cookd masalas for onion
Method
Soak the tamarind in 60 ml warm water for 10 minutes. Squeeze it well and keep the tamarind water aside. Peel and thinly slice the onions. Wash and finely chop the tomatoes and coriander leaves, and slit the green chillies.
Heat the oil in a kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for 1 minute until they splutter. Add the urad dal, curry leaves and asafoetida, and fry for 1 minute until the dal turns light golden.
Add the sliced onions and green chillies. Fry on medium flame for 8 to 10 minutes until the onions turn soft and light golden.
Add the turmeric powder, red chilli powder and salt. Mix on low flame for 1 minute until the raw smell of the powders goes.
Add the chopped tomatoes. Cook on medium flame for 5 to 6 minutes until they turn soft and pulpy.
Add 400 ml water and the tamarind water. Boil on medium flame for 5 minutes until the gotsu becomes slightly thick and the raw tamarind smell goes.
Add up to 100 ml water if needed and simmer on low flame for 2 minutes until the gravy is pourable. Switch off the flame and mix in the coriander leaves.
