Heat oil in a pan and add the onions, garlic and green chilli. Saute until it turns translucent.

Add the tomatoes and all the powdered spices and salt. Cook for 3 minutes. Add the coriander leaves and stir.

Add the eggs on low heat. Stir continuously until it starts to thicken. Before it turns completely solid and while it is still runny, turn off the heat.

Add cold butter. Keep mixing it until the butter melts and the eggs turn creamy. Serve along with toast with butter/ghee or with roti.

Thanks for this recipe. It came out well. I reduced red chilli powder and green chillies to make it kid friendly. It was yummy, creamy, and just perfect!
