Method

  1. 1

Get ready by rinsing the toor dal well. Wash the tomato and cut it into quarters. Wash the curry leaves, pat them fully dry, and finely chop the coriander leaves.

  2. 2

Add the rinsed dal, tomato, turmeric and water to a pressure cooker. Close the cooker and pressure cook on medium flame for 3 whistles, until the dal is fully soft and has no firm centres.

  3. 3

Let the pressure release naturally for about 10 minutes before opening the cooker. Remove and discard the loose tomato skin, then mash the dal and tomato until creamy.

  4. 4

Heat ghee in a small kadai on medium flame for 1 minute. Add mustard seeds and let them splutter for 30 seconds. Add asafoetida and dry curry leaves, and fry for 30 seconds until the leaves turn crisp.
