Cookd masalas for cauliflower
Method
Cut the cauliflower into large florets and the potatoes into 3 cm cubes. Chop the tomato and slit the green chillies.
Heat 2 tbsp of the mustard oil in a kadai on high flame until it smokes lightly, then lower the flame to medium. Fry the cauliflower florets for 6 to 8 minutes, turning, until they have light golden spots. Take them out on a plate.
Add the rest of the mustard oil. Add the dry red chillies, bay leaf, cloves, cardamom, cinnamon and cumin seeds and fry for 20 seconds. Add the potatoes, cover and fry on low flame for 5 minutes.
Mix the ginger paste, cumin powder, coriander powder, turmeric powder and red chilli powder with 50 ml water. Add this paste to the potatoes and cook on low flame for about 4 minutes, until the water dries and oil shows at the sides.
Add the salt, sugar, tomato and green chillies. Cover and cook for 5 minutes until the tomato turns soft.
Add the green peas and the fried cauliflower and mix gently. Cover and cook for 5 minutes.
Pour in 300 ml hot water and simmer uncovered on medium flame for 10 minutes, until the potatoes and cauliflower are tender and the gravy is medium thick.
Switch off the flame. Add the garam masala and ghee, cover and rest for 5 minutes. Serve hot with luchi, roti or steamed rice.
