Method
Get ready by washing the pineapple, green chilli and curry leaves. Peel and dice the pineapple. Grate the coconut, slit the green chilli, break the dry red chilli, powder the jaggery and whisk the curd until smooth.
Add the pineapple, turmeric powder, red chilli powder, salt and water to a kadai. Cook on medium flame for 8 to 10 minutes, stirring once or twice, until the pineapple is soft but still holds its shape.
Grind the grated coconut, green chilli, cumin, 1/4 tsp mustard seeds and water in a mixie until smooth. Add this paste to the cooked pineapple and mix well.
Add the jaggery and cook on low flame for 2 to 3 minutes. Stop when the jaggery melts and the mixture is hot, without letting it boil hard.
Switch off the flame and cool the mixture for 15 to 20 minutes until it reaches room temperature. Add the whisked curd and mix until smooth. Do not boil after adding the curd.
Heat oil in a small kadai on medium flame for 1 minute until hot. Add mustard seeds and cook for 1 minute until they splutter. Add the dry red chilli and curry leaves and fry for 1 minute until crisp, then pour the tempering over the pachadi and mix once.
