Ribbon pakoda, or ola pakoda: roasted gram, garlic, rice flour and besan pressed through a ribbon mould into hot oil. Mild, serves 6, 25 minutes, video.

In a mixie, blend the roasted gram to a fine powder along with the powdered spices, garlic and salt until it gets completely combined.

Sieve and add the dry ingredients in a bowl and combine well. Add and mix the sesame seeds.

Add hot oil into the dry flour and combine followed by water.

Combine and mix the dough well to get a soft dough. Rest the dough for 10 mins, covered.

Grease the mold and fill with the dough to 3/4th the height.

Heat oil in a kadhai and squeeze into the hot oil on a high flame and fry until crispy.

Cool down completely and break into pieces. Store airtight for 7-10 days.
