Method
Rinse the samai and moong dal together with the rinsing water until the water is mostly clear. Drain them well while you finely chop the ginger and crush the peppercorns. Wash the curry leaves and halve the cashews.
Heat 1 tablespoon ghee in a pressure cooker on medium flame. Add the drained samai and moong dal, and roast for 4 to 5 minutes until the moisture dries and the dal is lightly golden. Add the cooking water, salt and turmeric powder.
Close the cooker and pressure cook for 4 whistles on medium flame. Switch off the flame and let the pressure release naturally for 10 minutes. Open the cooker when the pressure has fully released; the millet and dal should be soft and easy to mash.
Heat 2 tablespoons ghee in a small kadai on low flame. Add the cumin and crushed pepper, and fry for 1 minute until they sizzle. Add the ginger, curry leaves, cashews and asafoetida, and fry for 2 to 3 minutes until the cashews are golden.
Add the tempering, extra salt and 1 tablespoon ghee to the cooker. Cook on low flame for 2 minutes, stirring until the pongal is soft and creamy. Serve hot.
