Cookd masalas for white sesame seeds
Method
Get ready by removing the stems from the dry red chillies. Wash the curry leaves. Keep the cooled cooked rice and tempering ingredients ready.
Heat a kadai on low flame for 1 minute until warm. Add the urad dal, chana dal and dry red chillies, and dry-roast for 2 to 3 minutes until the dals are light golden. Add the sesame seeds and asafoetida, and roast for 2 minutes until the sesame seeds start to pop. Transfer the mixture to a plate and cool it for 5 minutes until it reaches room temperature.
Grind the cooled roasted mixture with salt in a mixie. Pulse until it becomes a slightly coarse podi, not a paste.
Heat oil in the same kadai on medium flame for 1 minute until hot. Add the mustard seeds and fry for 30 seconds until they splutter. Add the urad dal, dry red chillies, curry leaves and asafoetida, and fry for 1 to 2 minutes until the dal is golden and the curry leaves are crisp.
Add the cooled rice, sesame podi, salt and gingelly oil to a wide bowl. Pour the hot tempering over it and mix gently until all the rice is coated.
Rest the mixed rice for 5 minutes before serving. The podi should be spread evenly and the rice should remain separate.
