    Heat ghee and oil in a pot, splutter the mustard seeds and add the cumin seeds. Add the asafoetida. Add garlic and cook for a minute until light golden brown. Add onions and cook until they are soft and translucent.

    Add the powdered spices and cook further for a minute. Add tomatoes and salt, and cook until they are soft and completely mashed.

    Add hot water and mix, and cook for 5 minutes, until the oil separates.

    Add garam masala and sugar, and mix well. Add thick sev/ gaati sev to the gravy and bring it to a boil, and cook for 2-3 minutes.
