    Add all the ingredients required for the eggs to a bowl and beat with a fork, just until the egg whites and yellows are well mixed. Add the eggs to a heatsafe bowl and tap on the table gently to remove any air bubbles.

    Place the eggs into a steamer and steam on a low heat for 10 - 12 minutes, or until the eggs are set. To test this, put a spoon on the surface of the eggs, if it stays on the surface, the eggs have set.

    To make the tempering, heat some oil. Add the garlic, followed by the urad dal. Once fragrant and golden, add the rest of the ingredients and fry.

    Cut the eggs and add a spoon of soy sauce. Add the hot tempering on top of the eggs and enjoy hot with rice.
