Cookd masalas for tapioca

Method

  1. 1

Peel the tapioca, removing the brown skin and the pink inner peel. Split it and discard the thick central fibre. Grate it finely, rinse it 2 to 3 times in plenty of water, and squeeze out the water well with your hands.

  2. 2

Mix the grated tapioca with the roasted rice flour and salt. Sprinkle the water little by little, only as needed, and rub it in with your fingers until the mixture feels moist and holds together when pressed, but is still crumbly.

  3. 3

Mix the grated coconut with a small pinch of the prepared tapioca. Keep the coconut and tapioca ready for layering in the puttu mould.

  4. 4

Pour water into the puttu steamer. Boil it on high flame for 5 minutes, until it bubbles steadily and gives off steam. The water should be enough to make steady steam for the full cooking time.

  5. 5

Fill the puttu mould with a layer of coconut, then the tapioca mixture, and repeat until full. Finish with coconut, close the mould and place it on the steamer. This quantity makes 3 to 4 moulds; fill them one at a time.

  6. 6

Steam each mould on medium flame for 8 to 10 minutes, until strong steam comes through the top and the tapioca is soft and cooked through. Push the puttu out onto a plate while hot. Repeat with the rest of the mixture, topping up the steamer water if needed.
