    Prepare a soft dough by mixing and kneading, maida, salt, sugar, oil, water. Cover the dough and let it rest for 30 minutes Heat oil in a pan, add curry leaves and let it crackle. Add the chopped carrots and thinly sliced onions and saute for 2 minutes. Add salt and sugar and let the onions caramelize a little.Add the masala powders, give it a good mix. Keep it aside.

    Divide the dough into 3-4 equal sized pieces. Roll each one out and apply oil on top and dust it with flour. Place the discs on top of each other and roll it flat. Heat a tawa, and cook the rolled out pile together on a low flame for 1 minute on each side. Take it off the pan, trim off the round parts to form a square. Cut it into long logs and peel off each sheet. Fold it like a cone and add the onion filling inside. Apply maida batter on the loose end and close the open end and seal it tightly. Heat oil in a kadai, deep fry the samosas till golden brown and crispy.
