Add the dried fruits to a pan along with orange juice, brandy/rum, and orange zest. Mix well and cook on a low-medium flame for 3–4 minutes, until the fruits absorb the liquid. Set aside and allow to cool completely.

In a mixing bowl, add the brown sugar and melted butter. Whisk until evenly combined. Add the eggs one at a time, whisking well after each addition.

Sift in the maida, spice powder, and baking powder. Mix gently until just combined. Add the cooled, soaked fruits and fold gently to form a thick batter.

Line a baking tin with parchment paper and pour in the prepared batter. In a deep pan, spread a layer of salt at the bottom and place a stand or elevation inside. Place the cake tin on the stand, cover, and cook on a medium flame for 50–60 minutes, or until the cake is cooked through and moist. Remove the cake and pour 2–3 tablespoons of orange juice or brandy over the top. Let it rest for 2–3 hours. Once completely cooled, slice and serve.
