Vattayappam is a soft Kerala steamed rice cake of fermented rice flour, grated coconut, sugar and cardamom. Serves 2, 40 minutes plus fermenting, with video.

    Take a pan and make a mixture of 3 tsp of rice powder and water

    In a mixer jar, mix all the measured ingredients with the mixture. Add the mixture gradually to get a dosa/idly batter consistency.

    Rest the batter for at least 3-4 hours for fermentation.

    Brush the pans with butter. Pour the batter into the pans leaving space for the batter to rise. Make sure the steamer is hot before placing the pans. Steam it for 20 minutes on a medium flame.
