Method
Soak the chana dal and toor dal together in 500 ml water for 1 hour. Drain them well after soaking.
Remove the dark outer bracts until the tender florets remain. Pull out the hard stamen and papery petal from each floret. Chop the tender flower finely, rinse it in 500 ml water, and keep it submerged until needed. Rinse the curry leaves.
Grind the soaked dals, dry red chillies, asafoetida and salt in a mixie without adding water. Keep the mixture coarse and do not make a smooth paste.
Pour 500 ml water into a steamer and heat it on high for 4 to 5 minutes until steam rises. Spread the dal mixture on an idli plate and steam it on medium heat for 10 minutes until firm and cooked through. Cool it for 5 minutes and crumble it.
Heat 2 tablespoons oil in a kadai on medium heat for 1 minute until hot. Add mustard seeds, urad dal and curry leaves, and fry for 1 to 2 minutes until the mustard seeds splutter and the dal turns light golden.
Drain the banana flower well. Add it to the kadai with salt and 120 ml water. Cover and cook on medium heat for 10 to 12 minutes, stirring twice, until the flower is soft and the water has dried.
Add 1 tablespoon oil and the crumbled steamed dal, and mix gently. Cook uncovered on low heat for 5 to 7 minutes until the dal is dry and lightly roasted.
