Cookd masalas for broken wheat
Method
Roast the broken wheat in a dry kadai on low flame for 5 to 6 minutes. Stir often until it smells nutty and turns lightly golden. Transfer it to a bowl.
Heat 2 tablespoons of ghee in the same kadai on low flame. Fry the cashews and raisins for 2 minutes, until the cashews turn light golden and the raisins puff up. Remove them to a plate.
Boil the water in the kadai on medium flame for 5 minutes. It should be fully hot and bubbling before you add the roasted wheat.
Add the roasted wheat slowly while stirring on low flame. Cover and cook for 12 to 15 minutes, stirring every few minutes, until the wheat absorbs the water and is fully soft with no hard bite.
Add the sugar and mix well on low flame. Cook for 5 minutes, until the sugar melts and the mixture becomes loose and glossy.
Add 2 tablespoons of ghee and the cardamom powder. Cook for 3 minutes, stirring until the kesari leaves the sides of the kadai. Mix in the fried cashews and raisins, then serve warm.
