Cookd masalas for broken wheat
Method
Get ready by rinsing the broken wheat well and draining it. Break the jaggery into small pieces, powder the cardamom, and keep the thin and thick coconut milk separately.
Heat 1 tbsp ghee in a pressure cooker on medium heat. Fry the cashews, raisins and coconut chunks for 3 to 4 minutes until the cashews are light golden and the raisins swell. Remove and keep aside.
Add 3/4 tsp ghee to the same cooker. Add the rinsed broken wheat and roast on low heat for 2 minutes until it is lightly coated with ghee.
Pour in 700 ml water and close the cooker. Pressure cook on medium heat for 3 whistles, then switch off and let the pressure come down naturally for 10 minutes. Open and check that the wheat is soft and presses easily between your fingers.
Mix the jaggery with 100 ml water in a small pan. Heat on low for 3 to 4 minutes until melted, then strain it into the cooked wheat. Cook on medium heat for 5 to 6 minutes until the payasam thickens slightly.
Pour in the thin coconut milk and cook on low heat for 4 to 5 minutes, stirring often. Cook until the payasam is smooth and slightly loose, as it will thicken while cooling.
Add the thick coconut milk, cardamom powder and salt. Heat on low for 2 minutes without boiling hard, until heated through. Fold in the fried cashews, raisins and coconut chunks, then serve warm.
